"Top Chef" Seared Pork Chops

Ingredients:
4 servings
Thin cut Bone-in Pork Chop - 3-4 oz each about 2" thick
4 cups extra virgin olive oil, reserve 1/2 cup
1 cup apple juice
juice and zest of 2 lemons
4 sprigs sage
4 sprigs thyme
1 cup of ginger sliced thin
Salt and pepper to taste
Directions:
1). Mix 3.5 cups of olive oil, apple juice, lemon juice and zest, ginger, thyme and sage together.
2). Marinate pork in olive oil mixture for at least 2-4 hours. Remove from marinade, pat dry and season with salt and pepper.
3). Sear pork chops in a hot pan with reserved olive oil and caramelize on each side until cooked to desired doneness or 145° F.
4). Remove from pan and let rest.
