"Top Chef" Roasted Sweet Potatoes

Ingredients:

4 medium size sweet potatoes
1/4 cup olive oil
Salt and pepper to taste
1 large knob of peeled ginger
1/2 head of garlic, unpeeled
4 sprigs of thyme
4 sage leaves
1/2 cup water
2 tbsp local honey
2 tbsp butter

Directions:

1). Pre-heat oven to 375° F. Poke the sweet potatoes several times with a knife.
2).
Place the potatoes in a roasting pan, drizzle with olive oil and season.
3). Add all of the ingredients to
the roasting pan except the butter and honey.
4). Cover and roast for about 25-30 minutes
or until cooked through. Remove from the oven and discard skins.
5). Add butter to
potatoes, and drizzle with honey. Add more salt and pepper to taste.
