Recipe: Apples Baked in Various Healthy Ways

Every child who attended the 2013 Easter Egg Roll was able to snack on a juicy fresh apple, which are always popular at the White House -- eaten raw or cooked using any of these preparations, which White House Pastry Chef Bill Yosses and his team also demonstrated yesterday.  

Baked Apples with Blue Cheese and Figs

4 apples

1 tablespoon canola or safflower oil

1 tablespoon sweet wine or port

4 ounces crumbled blue cheese

1/4 cup chopped dried figs (or raisins).

Preparation

  1. Preheat over to 300F
  2. Halve and core apples.
  3. Put cut side down in a greased 9-by-13-inch pan.
  4. Drizzle with oil and wine
  5. While apples are baking, combine blue cheese and chopped dried figs/raisins.
  6. After 10 minutes, turn and baste apples, then set cheese and dried fruits on apples. Resume baking for 10-15 more minutes, until apples are soft to the touch and slightly yielding, about 20-30 minutes total baking time.

Baked Apples with Balsamic Vinegar and Rosemary

Ingredients

4 apples

1 tablespoon olive oil

1/4 cup balsamic vinegar

1 tablespoon chopped fresh rosemary.

Preparation

  1. Preheat oven to 300 F
  2. Halve and core apples.
  3. Put cut side down in a greased 9-by-13-inch pan.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Bake for 10-15 minutes, then turn and baste apples
  6. Sprinkle apples with fresh rosemary after turning, resume baking until apples are soft to the touch slightly yielding, about 20-30 minutes total baking time

 

Cranberry-Orange Sautéed Apples

Ingredients

1 1/2 pounds thinly sliced apples

4 tablespoons canola or safflower oil

1 cup fresh cranberries

2 tablespoons sugar

1 tablespoon orange zest

Preparation

  1. Peel and cut apples in half and core, remove apple seeds  and slice into thin slices
  2. Place oil in pan over medium heat  
  3. Add apples, sugar, orange zest, and cranberries; cover, turn the heat to low and cook for 10 minutes

Serve warm

 

Moroccan-Spiced Roasted Apples

Ingredients

2 pounds apples, cut into chunks

2 tablespoons olive oil

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon cinnamon.

Preparation

1. Heat the oven to 425.

2. Toss apples with olive oil; spread on a rimmed baking sheet.

3. Roast for 10 minutes.

4. Add minced garlic, minced ginger, ground cumin, ground coriander and cinnamon; toss well to coat.

5. Roast until tender, stirring occasionally

 

Lemon-Poppy-Seed Roasted Apples

Ingredients

2 pounds apples, cut into chunks

2 tablespoons canola oil or safflower oil

2 tablespoons sugar

1 tablespoon poppy seeds

1 tablespoon lemon zest

Preparation

1. Heat the oven to 425.

2. Toss apples with oil; spread on a rimmed oiled  baking sheet.

3. Roast for 10 minutes

4. Add sugar, poppy seeds and lemon zest; toss well to coat.

5. Roast until tender, stirring occasionally, another 10 minutes

Serve warm
