Sunny’s Fluffer Almond Nutters

Makes 2

  • Cooking spray
  • 2 large wheat tortillas
  • ¼ cup maple or regular almond butter
  • 1 ripe banana, mashed
  • ¼ cup chopped almonds
  • ½ cup mini marshmallows

In a medium bowl, mix the banana and the almond butter. Use cooking spray to coat a griddle or pan on medium heat. Spread half of one side of each wheat tortilla with the banana mixture. Place each tortilla, dry side down on the griddle then continue to add toppings on the side of the tortilla with the banana mixture. Add the chopped almonds and marshmallows evenly. By this time, the un-topped side of the tortilla should be warm. Fold it over the other half to make a half circle. Cook until the marshmallows begin to expand, then gently flip and cook until the bottom is golden and the marshmallows become gooey! Remove from the heat and allow to slightly cool before serving.

Sunny’s Banana & Berries Smoothie

Makes 2

  • 2 bananas, sliced into chunks
  • 10 strawberries, hulled and roughly chopped
  • ½ cup blueberries
  • ½ cup Greek yogurt
  • 1¼ cups fresh-squeezed orange juice
  • Agave syrup, to taste

In a blender, add bananas, strawberries, blueberries, yogurt, and orange juice. Blend until smooth, then taste and add agave syrup to taste. Blend again to incorporate the agave syrup, then taste and adjust again, if needed. Serve cold.
