Bobby Flay Brings Fun Flavors to the White House Easter Egg Roll

Donut Waffles or Wonuts!

Yields approximately 21 mini wonuts

  • 1/3 cup AP flour
  • 1/3 cup whole wheat flour
  • 1/3 cup old fashioned Quaker oats, processed in blender or food processor until ground fine
  • 2 tablespoons pure cane sugar
  • 1 heaping teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 large egg
  • 1 tablespoon clover honey
  • 1 teaspoon pure vanilla extract
  • 1/3 cup plus 2 tablespoons low fat buttermilk or skim milk
  • 2 tablespoons unsalted butter melted and cooled
  • 1 tablespoon canola oil
  • Nonstick spray for the waffle maker

Whisk together the flours, ground oatmeal, sugar, baking powder and salt in a small bowl.

Whisk together the egg, honey, and vanilla until smooth. Add the milk, butter, and oil and mix until combined. Add the dry ingredients to the wet ingredients until the mixture just comes together. Cover and let sit at room temperature. The mixture will be thick. 

Preheat a Belgian waffle maker according to the manufacturer’s directions. Spray the waffle grates liberally with the spray. Use a small scoop or a tablespoon to portion the batter onto each quarter of the hot waffle iron. Close the cover and use according the manufaturer’s directions. Remove the waffles to a baking rack to cool slightly. Spread with peanut butter for the banana donut and sprinkle with nuts or drizzle with lemon glaze for the blueberry donuts (see recipe variations below).

Banana Peanut Butter

  • 1 recipe waffle donut batter
  • 1 medium ripe banana (should be spotted with brown spots) peeled and finely diced
  • ½ cup natural peanut butter or natural almond butter (if you have nut allergies you can use sunflower seed butter)
  • Chopped peanuts, almonds, or sunflower seeds

Fold the bananas into the batter and make in waffle maker according to directions above. Spread a teaspoon of peanut butter on top of the wonut and garnish the top with chopped nuts, if desired.

Blueberry Lemon Glazed

  • 1 recipe waffle donut batter
  • 1 cup fresh or frozen blueberries
  • ¼ cup confectioner sugar
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons fresh lemon juice

Fold the blueberries into the batter and make in the waffle maker according to the directions above.

Whisk together the sugar, zest, and juice in a small bowl until smooth. Let sit for 2 minutes. Drizzle a teaspoon over the wonuts.

 

Yogurt Bowl Waffles

1 waffle (from above) as the base per serving

Yogurt Bowl Combinations: Orange Dreamsicle Chocolate or Very Berry Swirl

Orange Dreamsicle Chocolate

  • 1 cup Greek nonfat yogurt 
  • ¼ cup orange segments, finely diced
  • ½ teaspoon finely grated orange zest
  • ¼ teaspoon pure vanilla extract
  • 2 tablespoons finely grated semisweet chocolate
  • Fresh mint for garnish

Combine the yogurt, oranges, zest, vanilla, and chocolate in a bowl. Put the waffle on a plate and top with a large dollop of the yogurt.

Very Berry Swirl

  • ¾ cup fresh berries (strawberries, blackberries, raspberries, blueberries any or all)
  • 1 tablespoon sugar, honey or agave
  • 2 teaspoons fresh lemon juice
  • 1 cup Greek nonfat yogurt
  • ¼ teaspoon pure vanilla extract
  • Lowfat granola or nuts

Combine the raspberries, blackberries, strawberries, sugar,  and lemon juice in a bowl and coarsely mash the fruit. Put the yogurt in a bowl, add the vanilla and mix until combine. Swirl the fruit into the yogurt. Place a dollop on top of the waffle and sprinkle with a few tabelspoons of granola or nuts.
