Perfect Curry Chicken Wraps
"I was on the Internet, and was thinking, You know, anything can be made into a wrap. So I decided that I'd make a curry chicken wrap," says Myka. "For a side: sliced strawberries and a fruit and yogurt smoothie." Myka's recipe calls for grilled chicken, but you can use any kind of cooked chicken. –Myka Smith-Jackson, age 8, Kentucky
Makes 2 to 4 servings
Ingredients:
2 grilled skinless boneless chicken breasts, cut into bite-size pieces
2 stalks celery, chopped
1 red apple, peeled and diced
1/4 cup raisins
1/2 cup mayonnaise
1/4 teaspoon curry powder
Salt and pepper
2 (10-inch) whole-wheat tortillas
Preparation:
- In a large bowl, combine the chicken, celery, apple, raisins, mayonnaise, and curry powder. Stir to combine, and season to taste with salt and pepper.
- Divide the mixture between the tortillas, and wrap tightly around the filling from bottom to top, overlapping one end, burrito style. Cut the wraps in half to serve.
